Organic farmer Hans Oppikofer has 500 fruit trees on his farm and harvests around 80,000 kilograms of apples and pears every year. He uses them to make his own juice, which he then processes into cider, verjus, and vinegar. Some of it ends up in glasses and on plates at his wine tavern.
